Creamy chocolate mousse

  • 1.25
    slabs (150 g) dark chocolate, broken into squares
  • 50
    strong black coffee
  • 50
  • 3
    eggs, separated
  • 250
    cream, chilled
  • 50
    extra whipped cream and fresh edible flowers (optional) to decorate


Melt the chocolate and coffee in a glass bowl over boiling water or in the microwave oven. Stir frequently.

Add the butter and egg yolks, stirring until the butter has melted and the mixture has cooled slightly.

Whisk the egg whites until soft peaks form and fold into the chocolate mixture.

Spoon the mixture into small cups or glass bowls and chill overnight.

Decorate with a cream rosette and fresh edible flowers if desired
