Coriander and garlic aioli

  • 2
    large eggs
  • 2
    cloves garlic
  • pinch of salt
  • 375
    olive oil
  • 20
    white wine vinegar
  • 50
    fresh coriander


10 minutes
Place the eggs, garlic and salt in a food processor.
Blend well, then add the olive oil in a thin and steady stream while the processor is on. It should be thick and creamy.
Add the white wine vinegar and fresh coriander.
Chill until ready to eat.
Delicious with potato tortilla, and with paella, chicken and fish dishes.
