Cold clear soup with tomato

  • 5
    plump ripe tomatoes
  • boiling water to cover tomatoes
  • 60

    boiling water
  • 100
    celery leaves


1. Using a sharp knife, make a cross at the base of the tomatoes, plunge them into boiling water and leave for a few minutes. Drain off hot water and replace with cold. Leave to cool. 2. Remove, peel and dice tomatoes. 3. Dissolve the Bovril in the boiling water to make a basic consommé. Add diced tomatoes (reserving some neatly diced 3 mm cubes for garnish) and celery leaves and simmer for 10 minutes. 4. Remove from the heat and strain through a fine sieve. Leave to cool. Garnish with reserved tomato cubes and serve cold.
