Ingredients (8)

3.00 eggs
250.00 ml castor sugar
375.00 ml flour
2.00 ml salt
15.00 ml Baking powder
30.00 ml nestlé coffee powder
milk — and water
37.00 g margarine

Method:

1. Beat eggs, slowly adding castor sugar, until thick, light and creamy.
2. Sift all the dry ingredients together.
3. Dissolve coffee in 30 ml hot water, and enough cold milk added to total 190 ml liquid. Put coffee mixture and margarine into saucepan and bring to boil.
4. Add dry ingredients to sugar and egg mixture. Over this pour the boiling mixture and beat with an egg beater for 2 minutes.
5. Pour into 2 greased and lined 20 cm pans. Bake at 200 ºC for 20 to 25 minutes.
6. Cool before filling and icing. Sandwich the two cakes together with date surprise filling (see recipe) and cover with glacé fudge icing (sufficient to cover 20 cm cake top – see recipe).
