Coconut Milk Jelly

  • 500
    coconut milk
  • 250
    cloudy apple juice
  • 3
    cardamom pods, bruised
  • 2
    cinnamon sticks
  • 2
    palm sugar
  • 5
    gelatine leaves, softened
  • 20
    toasted coconut shavings, to serve


In a saucepan, simmer the coconut milk, apple juice, spices and sugar for 5 minutes over low heat. Remove spices and stir in gelatine. Pour into a mould and chill until set. Serve decorated with coconut shavings.
