Citrus fruit salad

    sweet wine
  • 90
    castor sugar
  • 1
    vanilla pod
  • 1
    large orange sliced into rings
  • 3
    ruby grapefruit, peeled and cut into segments
  • 2
    clementines or naartjies, peeled and cut into segments

Using a small, sharp knife, remove strips of zest from the lemons and squeeze out the juice. Pour the wine into a large saucepan, add 150 ml water plus the sugar and dissolve over low heat. Add the lemon zest, juice, vanilla pod and orange rings and simmer slowly for about 20 minutes. Add the remaining fruit, simmer for another 2 minutes and serve hot or cold.
