Ingredients (11)

4.00 tuna — steaks, fresh
salt and freshly ground black pepper
sunflower oil — for frying
fresh coriander — chopped
citrus peel — strips
TOPPING
1.00 lemon juice
5.00 ml dried chillies — crushed
125.00 ml orange juice
15.00 ml fish sauce
1.00 ml sugar
salt and freshly ground black pepper

Method:

Season tuna with salt and pepper. Heat oil in a frying pan until very hot and sear tuna briefly on both sides.
TOPPING: Mix all ingredients and pour over fish. Cook over high heat, turning once, for a total of 5 minutes.
Stir in coriander, garnish with citrus peel and serve immediately.
Boiled baby potatoes and a large green salad are the ideal accompaniments to this dish.
