Citrus and chilli pork belly with roasted vegetables

Ingredients (9)

Marinade:
2 dried chilli
3 garlic — cloves
4 to 5 peppercorns
pinch sea salt
fresh chillies — 573
Sauce/glaze:
3 oranges — juice only
2 lemons — juice only
2 Tbs honey
2 fresh chillies — deseeded, finely chopped

Method:

Pork belly marinade:
Grind everything to a paste with a pestle and mortar.
Rub all over the belly and marinade for at least an hour.

For the sauce/glaze:
Mix everything together.

Bake the pork belly for about an hour and a half at 180°C.
Remove the belly from the oven and rub the citrus sauce all over the belly.
Pour the rest of the citrus sauce in the roasting pan.
Grill for at least another half an hour in the oven.
Serve with roasted vegetables.
