Ciabatta with artichokes and tuna

    artichoke hearts, drained and halved

    olive oil
  • 2
    cloves garlic, crushed
  • 30
    fresh fennel or dill, finely chopped
  • butter
  • 1
    ciabatta bread sliced into 8-10 slices
  • 185
    tuna, flaked
  • 15
    tomato purée
  • salt and freshly ground black pepper


Preheat the oven grill. Spray a baking sheet non-stick spray or grease well. Place the artichokes on the prepared baking sheet. Mix the olive oil and garlic. Brush the artichokes with the oil mixture and sprinkle with half the fennel. Grill until golden brown. Lightly butter the slices of bread. Mix the tuna, tomato purée and remaining fennel. Season salt and black pepper. Arrange the artichokes and tuna mixture on top of the buttered slices of bread. Grill again for a few minutes until heated through. Cool slightly before serving. Makes 8-10 slices of bread.
