Chunky chicken soup with garlic croutons

    slices brown bread, crusts removed

    garlic cloves, crushed

    sunflower oil

    onion, chopped
  • 500
    chicken breast fillet, cubed
  • 2 cans Denny Heat and Serve Cream of Chicken Soup
  • 100
    baby spinach leaves, shredded
  • 60
    butter, melted
  • spicy mustard seasoning


1. Cut the bread into 1cm cubes. Stir two cloves of crushed garlic into the melted butter. Place the bread cubes onto a baking tray and drizzle with the butter. Toss to coat and bake in a preheated oven for 10 to 15 minutes until brown.
2. While the croutons are baking, heat the oil in a saucepan and add the onion and remaining cloves of garlic. Sauté until tender, then add the chicken and cook for one minute.
3. Add the soup and simmer, uncovered, for five minutes. Stir in the spinach and season to taste.
4. Remove the croutons from the oven and sprinkle with mustard seasoning.
