Chopped tomato salsa

  • 1
    medium onion, chopped
  • 500
    ripe tomatoes, quartered
  • 65
    fresh coriander leaves
  • 1
    small green chilli, seeded
  • 5
    coarse salt
  • 45
  • freshly ground black pepper


Use a food processor to chop the onion finely and add the tomatoes, coriander leaves and chilli. Chop finely until well blended. Transfer to a fairly large dish and add the remaining ingredients. Mix and chill until just before serving. Serve with Delicious leg of lamb, Chopped mixed salad and guacamole (see recipes) and fill the tortillas with the mixture. Alternatively, serve with Tuna balls. Makes about 500 ml (2 c) salsa.
