Chinese egg fried rice with bacon

    Basmati rice
  • 1
    packet bacon(250g), chopped
  • 2
    spring onions, chopped
  • 3
    free range eggs, beaten
  • 1
    Tbs soy sauce
  • Extra virgin olive oil for frying


Place 100g basmati rice in the bottom of a deep pot, cover with water and bring to the boil. Once the rice has absorbed all the water, remove from the heat and cover with the lid and leave for 10 mins.

While the rice is cooking, in a separate pot heat the oil and fry the onions and bacon for 5 mins or until bacon is crispy. Stir in the cooked rice, soy sauce and simmer for 5 mins. Stir in the beaten egg and once the egg is cooked serve immediately.
