Chimichurri sauce

Ingredients

    garlic cloves, crushed

    dried origanum
  • 4
    bay leaves
  • 1
    fresh chilli, seeded and chopped (optional)

    paprika
  • 5
    ml
    dried thyme
  • 4
    spring onions, finely chopped
  • 1
    tomato, finely chopped
  • 30

    freshly chopped parsley
  • 2
    ml
    cumin seeds
  • 5
    ml
    salt
  • 2
    ml
    freshly ground black pepper
  • 125
    ml
    sunflower oil
  • 60
    ml
    white wine vinegar
  • 250
    ml
    boiling water
 

Method

 
Mix all the ingredients and seal them in a bottle or container. Refrigerate overnight.
Serve the chimichurri sauce as an accompaniment to the Argentine asado.
