Ingredients (12)

500.00 g pork — fillet, cubed
salt and freshly ground black pepper
oil
1.00 onion — finely chopped
1.00 garlic — cloves, crushed
10.00 ml fresh ginger — grated
10.00 ml cayenne pepper
2.00 ml paprika
5.00 ml fresh thyme
15.00 ml flour — cake
30.00 ml tomato purée
150.00 ml stock — chicken

Method:

Season the pork with salt and pepper and fry in heated oil until just brown on the outside. Remove from the pan and set aside.
Sauté the onion, garlic and ginger in a little oil until soft. Add the cayenne pepper and paprika, stir-frying for another minute. Add the remaining ingredients except the stock. Stir-fry for another minute and add small quantities of the chicken stock at a time. Simmer until a thick sauce is formed. Return the pork to the pan and heat until warmed through.
Serve immediately with rice and vegetables.
Serves 3.
