Chicken stir-fry with sesame seed

    chicken breast fillets, cut into strips
  • salt and freshly ground black pepper

    olive oil
  • 15
    sesame seed
  • 20
    soy sauce
  • 175
    spinach (hard stems removed), finely chopped
  • 200
    fresh oyster mushrooms OR fresh button mushrooms, halved

    butter beans, drained
  • 15
    white grape vinegar


Season the chicken strips with salt and pepper. Heat the olive oil in a wok or fairly large pan and stir-fry the chicken strips until done. Add the sesame seed and soy sauce and mix. Remove the chicken to a side dish. Stir-fry the mushrooms in a little extra olive oil until lightly browned and add the spinach. Stir-fry for one minute more or until the spinach is done. Add the chicken and beans and heat through. Add the vinegar and season with extra salt and pepper if necessary. Serve immediately. Serves 4.
