Ingredients (15)

2.00 garlic — cloves, thinly sliced
375.00 g chicken breast fillets — sliced
2.00 lemon — zest only
1.00 yellow pepper — strips
15.00 ml oil
1.00 handfull mixed bean sprouts — to garnish
3.00 cm fresh ginger — peeled and chopped
5.00 ml honey
1.00 green pepper — strips
15.00 ml sherry — dry
30.00 ml soy sauce
2.00 celery stalks — sliced diagonally
4.00 carrots — peeled, julienned
30.00 ml lemon juice
1.00 onion — small, cut into wedges

Method:

Mix the chicken, sherry, onion, carrots and ginger and leave to stand for 15 minutes.
Heat the oil in a large pan or wok and stir-fry the garlic, celery and peppers for 1 minute. Add the chicken mixture and stir-fry for 3 minutes.
Stir in the soy sauce, honey, lemon juice and rind and stir-fry for 1 minute longer. Scatter the sprouts on top just before serving.
Serve with Asian rice noodles.
