Chicken noodle corn chowder

  • 2
    chicken breasts, cut into 1 cm strips

    baby corn cobs, chopped
  • 10
    mangetout, chopped
  • 4
    chives, chopped
  • 2
    garlic cloves, crushed
  • 0.25
    red chilli, seeded and chopped
  • 10
  • 1
    chicken stock
  • 75
    (1 packet) instant noodles
  • 200
    coconut milk
  • fish sauce to taste
  • toasted sesame seeds
  • salt and freshly ground black pepper


Stir-fry the chicken, vegetables, chives, garlic and chilli in the oil until the chicken is done.
Add the stock and noodles and bring to the boil.
Simmer gently until the noodles are tender.
Add the coconut milk, fish sauce, sesame seeds and salt and black pepper to taste.
Makes 1.2 litres.
