Chicken kebabs

  • 400
    chicken fillets, cubed
  • 250
    streaky bacon
  • 1
    large green pepper, seeded and cut into squares
  • 250
    fresh mushrooms
  • 400
    cranberries in their juice
  • juice and rind of 1 large orange
  • salt and freshly ground black pepper


Thread the chicken cubes, bacon, green pepper and mushrooms onto kebab skewers and arrange in a flat dish. Mix the cranberries (including juice) with the juice and rind of the orange. Pour over the kebabs and marinate for 3-4 hours in the fridge. Turn on the oven grill. Arrange the kebabs on a baking sheet and season well with salt and pepper. Grill or braai for a few minutes until done. Turn frequently, brushing with the marinade. Serve with pita bread, lettuce leaves, red onion rings and orange slices. Makes about 12 kebabs.
