Chicken in peanut butter

  • 1
    whole chicken
  • seasoned flour

    large onion, chopped
  • 1
    clove garlic, crushed

    ginger, crushed
  • 1
    green pepper, chopped
  • 2
    large tomatoes, peeled and diced
  • 1
    chicken stock cube
  • 250
    boiling water
  • salt and pepper

    peanut butter


1. Cut chicken into portions and toss in seasoned flour. 2. Heat oil and brown chicken, remove and keep warm. 3. Sauté onion, garlic, ginger until transparent. 4. Add green pepper and tomatoes. Return chicken to saucepan. Add stock cube, dissolved in boiling water, salt, pepper and rosemary. Bring to the boil and then simmer for 30 minutes. 4. Add peanut butter and continue to cook over low heat for a further 15 minutes, add a bit of water if the stew is too thick. Serve with samp or pap.
