Chicken breasts wrapped in Parma ham

  • 8
    chicken breast fillets
  • 16
    slices Parma, Black Forest or peppered ham
  • 16
    fresh sage leaves
  • olive oil
  • milled black pepper to taste


Wipe chicken breasts with a damp cloth. Carefully wrap 2 (overlapping) slices of ham around each breast. They will stick to the chicken quite easily and will not need securing. Pop 2 sage leaves under the ham, brush with oil and season with pepper to taste. Preheat the grill and grill chicken breast for about 3 to 4 minutes on each side, or until cooked and nicely browned. Serve with boiled or oven-roasted baby potatoes and a green salad.
