Cherry loaf

    castor sugar

    large lemon, grated peel
  • 5
    large eggs, separated
  • 150
    self-raising flour
  • 500
    whole glacé cherries
  • icing sugar to decorate


Preheat oven to 180 ºC. Grease a 23 cm long loaf pan. Cream butter and castor sugar in a large bowl until light and fluffy. Add lemon peel and egg yolks and mix well. Sift flour and fold into creamed mixture. Stir in cherries. In a clean bowl, whisk egg whites until soft peaks form. Fold into flour mixture. Pour into prepared pan and bake for 40 to 50 minutes, or until a skewer inserted in centre comes out clean. Dust with icing sugar. Slice and serve with whipped butter.
