Cherry and lavender clafoutis (flan)

    lavender petals

    large eggs
  • 60
    castor sugar
  • 85
    cake flour
  • 15
    Kirsch or cherry liqueur
  • 1
    x 410 g can black cherries, drained
  • icing sugar


35 to 45 minutes
Heat the cream and milk in a saucepan until it starts to steam.
Add the lavender petals.
Remove from the heat, cover and leave to stand until cool.
Whisk together the eggs, sugar and flour.
Stir into the cream mixture.
Add the Kirsch or cherry liqueur and the black cherries and stir well.
Pour into a greased 22 cm round pie dish and bake in a preheated 180 °C oven for 35 to 45 minutes, until set.
Dust with the icing sugar and serve with cream or vanilla ice cream.
