Cheesy green peppers

  • 4
    green peppers, halved and seeded
  • 250
    uncoloured cheese, sliced
  • basil
  • 65
    olive oil
  • 30
    lemon juice
  • 2
    cloves garlic, crushed
  • 65
    fresh basil, finely chopped
  • salt and freshly ground black pepper


Boil the green pepper halves in a little water until tender enough to fold in half. Rinse under cold water and drain. Place a slice of cheese in each green pepper half and secure with a cocktail stick. Season with basil to taste. Blend all the ingredients for the sauce and brush the green peppers liberally with the mixture. Grill over medium-hot coals until the cheese has melted. Serve immediately with the leftover sauce.
