Cheesy chicken with tomato

  • 4
    deboned chicken breasts (fillets)
  • salt and freshly ground black pepper
  • oil
  • 4
    tomatoes, sliced
  • 45
    freshly chopped basil
  • 250
    mozzarella cheese, sliced
  • 12
    black olives

Preheat the oven to 180 ºC (350 ºF). Spray an ovenproof dish with non-stick spray. Flatten the chicken breasts slightly with the palm of your hand and season to taste with salt and pepper. Fry in a little oil until brown on both sides. Arrange a layer of tomato slices in the bottom of the dish and place the chicken breasts on top. Season with a little basil and arrange the remaining tomato and cheese slices and olives on top. Sprinkle with the remaining basil and season with salt and pepper. Bake for 20-25 minutes or until the cheese has melted. Serve immediately with salad and bread. Serves 4.
