Ingredients (7)

500.00 ml flour — self-raising
250.00 ml mature cheddar cheese — finely grated
2.00 ml black pepper — freshly ground
250.00 ml olives — pitted, chopped
30.00 ml fresh parsley — chopped
4.00 eggs — extra large, whisked
80.00 ml butter — melted

Method:

Preheat the oven to 180 ºC. Spray a 26 x 10 cm loaf tin with non-stick spray or grease well. Sift the flour into a mixing bowl and add the cheese, pepper, olives and parsley. Stir in the eggs and melted butter and mix well. Spoon into the prepared loaf tin and bake for about 35-40 minutes until done or a testing skewer comes out clean. Turn out onto a wire rack to cool until just warm. Serve buttered.
Makes 1 medium-sized loaf.
