Cheese and biltong biscuits

    cake flour
  • 1
  • 150
    cold butter
  • 100
    sliced biltong, shopped
  • 125
    mature Cheddar, grated
  • 45
    cold water (approximately)


15‑20 minutes
Sift flour and salt together into a bowl. Cut in the butter, then rub with your fingertips to resemble crumbs. Add chopped biltong and cheese. Make a well in the centre and add the water. Stir to form a firm dough. Shape into a log shape, cover in cling film and refrigerate for 30 minutes. Cut into thin slices. Place on to a greased baking tray and bake in preheated 180 °C oven for 15-20 minutes, until beginning to brown. Cool on a baking rack.
