Cheese and herb stuffed tomatoes

Stuffed tomato

    large tomatoes
  • 25
    sunflower seeds, chopped
  • 1
    clove garlic, chopped
  • 20
    fresh origanum, chopped
  • 5
    or dry origanum, chopped
  • 20
    fresh basil, chopped
  • 5
    or dry basil, chopped
  • 15
    olive oil
  • 100
    mozzarella cheese, thinly sliced


Oven temperature: 180°C

1. Cut out the tops of the tomatoes to make a shallow hollow and place the tomatoes in a greased ovenproof dish.
2. Combine the sunflower seeds, garlic, herbs and olive oil. Add salt and freshly ground black pepper, to taste.
3. Place a slice of cheese on each tomato, topped with some of the herb mixture. Bake in a preheated oven for 30 minutes until the tomatoes are cooked through, but still holding their shape. Serve with fresh ciabatta bread as a starter or an accompaniment.
