Char-grilled chicken and coriander couscous

    chicken breast fillets
  • olive oil
  • 12
    marinated sun-dried tomatoes, thinly sliced
  • 90
    freshly chopped coriander
  • 30
    freshly chopped parsley
  • 2
    lemons, zest


Prepare the couscous according to the pack instructions.
Place the chicken breast fillets between two sheets of clingfilm and flatten gently with a rolling pin.
Heat griddle pan until hot, or preheat the grill.
Brush the chicken breasts with oil and place on the griddle or under the grill for five to 10 minutes on each side, until cooked through.
Allow to cool.
Mix the remaining ingredients together and top with thinly sliced char-grilled chicken.
