Cappuccino cookies

    brown sugar

    large egg
  • 20
    instant coffee granules
  • 240
    cake flour
  • 2
    baking powder
  • 100
    white chocolate
  • fine coffee granules, to decorate


10 to 12 minutes
Beat butter, sugar and egg together. Dissolve coffee in 15 ml boiling water. Add to the butter mixture along with the flour and baking powder. Knead until smooth.
Dust your rolling pin lightly with flour and roll the dough out thinly on a lightly floured surface.
Use round cookie cutters to cut out cookies. Put onto greased baking trays and bake in a preheated 180 °C oven for 10 to 12 minutes.
Remove from oven and leave to cool on baking trays.
Remove from baking trays and spread with melted chocolate. Sprinkle lightly with coffee granules and leave to set on a cooling rack.
Store in an airtight container until ready to eat.
