Brown mushroom tarts

    readymade puff pastry, defrosted
  • 8
    brown mushrooms
  • 15

    olive oil
  • 4
    garlic cloves, crushed
  • salt and freshly ground black pepper
  • fresh sage leaves
  • 1
    egg yolk, whisked

Preheat the oven to 220 °C.
Cut the pastry into two 10 x 22 cm rectangles.
Clean the mushrooms by wiping them with a clean, damp cloth.
Heat the butter and olive oil until very hot.
Add the mushrooms and garlic and stir-fry for two to three minutes.
Remove from the heat and season with salt and pepper.
Arrange the mushrooms down the middle of both pieces of pastry and place a sage leaf alongside each.
Drizzle with the pan juices and brush the pastry lightly with the whisked egg yolk.
Bake for 10 minutes at 220 °C, then reduce the oven temperature to 200 °C and bake until golden brown and puffed out.
