Bread sauce

  • 1 large onion, peeled and quartered
  • 3 cloves
  • 1 bay leaf
  • 500 ml milk
  • 250 ml cream
  • 3 thick slices of stale bread, crusts removed and made into crumbs
  • salt and pepper, to taste
  • 30 ml butter


Place the onion, cloves, bay leaf and milk in a pan and heat gently.
Simmer the milk mixture for about 10 minutes.
Strain the onion, cloves and bay leaf from the milk and return to the heat.
Then stir in the cream and breadcrumbs.
Simmer for another 5 minutes, season with salt and pepper and add the butter.
Serve with roast chicken, turkey of whatever you fancy.
This sauce is also an excellent accompaniment to roast pork or plump pork chops.
