Bolinhos de bacalhau

  • 300
    dried cod, soaked for 24 hours, rinsed, boiled in water for 10 mins, skin & bones removed and shredd
  • 250
    potatoes (buy the floury kind), boiled and mashed
  • 1
    large lemon, zest only – grated
  • 1
    onion, finely chopped
  • 2
    garlic, peeled and finely grated
  • 2
    fresh parsley, finely chopped
  • 1/2
    cayenne pepper
  • 1/2
    freshly grated nutmeg
  • 4
  • Sea salt and freshly ground black pepper

Mix all ingredients together in a large bowl, breaking in the eggs and combining them with the ingredients individually.

Season to taste and then shape them with 2 tablespoons so that you have an oval shape and drop them into hot oil, frying them until they are golden and crispy.

Make sure the oil is not too hot because you want a golden, not a dark brown colour.

Serve warm or cold.
