Blue cheese and pancetta puffs

  • 400
    frozen puff pastry, thawed
  • 350
    Cambenzola rounds
  • 4
    slices pancetta or Black Forest ham
  • 1
    medium egg, beaten


Preheat oven to 220 ºC. Cut pastry into 2 equal squares. Place a round of cheese on each square and wrap 2 slices of ham around edge of each round. Brush edges of pastry with egg. Draw up sides of pastry to make a pyramid. Press edges together, leaving centre open. Slide onto a baking sheet and bake for 15 minutes. Halve and serve as a starter or, with salad, as a light lunch.
