Black cherries Carol

Ingredients 6
Servings 4


  • oil for deep frying
  • 425
    stoned black cherries
  • 30
  • 20
    cornflour mixed with a little water
  • 40
    brandy or cognac
  • icing sugar for sprinkling on top


Defrost phyllo pastry (cover to prevent it drying out). Cut each sheet in two, fry in deep fat until browned and drain on paper towelling. Set aside. Put the black cherries and sugar in a saucepan and bring to the boil. Thicken with cornflour and boil until thick. Stir constantly. Add the brandy and spoon onto four small plates. Place a piece of fried phyllo pastry beside the cherries. Add a scoop of vanilla Ice cream to each plate and sift a little icing sugar over just before serving. Serve immediately. Serves 4.
