Ingredients (16)

MARINADE
15.00 ml vinegar — wine
30.00 ml fresh chillies — 573
1.00 ml salt
10.00 ml fresh parsley — chopped
12.00 ml fresh chives — finely chopped
freshly ground black pepper — pinch
100.00 g biltong — thinly sliced
4.00 lettuce — to garnish
LEMON SAUCE
50.00 ml mayonnaise
50.00 ml sour cream
1.00 onion — small, grated
5.00 ml fresh parsley — chopped
10.00 ml lemon juice
1.00 ml mustard — powder
salt — pinch
freshly ground black pepper — pinch

Method:

Mix all the ingredients for the marinade and marinate the biltong for about an hour. Remove the biltong from the marinade and arrange on the lettuce leaves. Mix all the ingredients for the lemon sauce and spoon over the biltong slices. Serve with seed loaves (see recipe). Serves 4.
