Ingredients (14)

4.00 tsp fresh chillies — 573
2.00 onions — medium, finely chopped
2.00 carrots — thinly sliced
1.00 potatoes — diced
1.00 garlic — cloves, crushed
1.00 Litres stock — vegetable
2.00 Tbs tomato paste
1.00 tsp dried basil
100.00 g haricot beans — soaked
410.00 g beans — tinned
100.00 g green beans — sliced
1.00 tsp salt and freshly ground back pepper — to season
100.00 g parmesan cheese — grated, to serve
1.00 bread

Method:

Heat the oil in a frying pan and gently fry the onions, carrots and potato until softened. Add garlic, stock, tomato paste and basil. Simmer until thickened. Add haricot beans, followed by the green beans; adjust seasoning and simmer for another 20 minutes. Serve with Parmesan and bread.
