Basic custard sauce

    litre milk
  • 1
    vanilla pod, split lengthwise
  • 4
    large eggs, separated
  • 100
    castor sugar

Heat milk and vanilla pod in a saucepan until milk begins to simmer. Remove from heat and leave to infuse for 15 minutes. Beat egg yolks until smooth.
Add sugar and beat until thick and corn-coloured - it should take about 10 minutes.
Strain poaching milk slowly into egg yolks, beating constantly.
Pour into a heavy-based saucepan and stir continuously over low heat until it coats a spoon.
