Ingredients (12)

125.00 ml water — boiled
2.00 bananas — mashed
100.00 ml raisins — seedless
250.00 ml brown sugar — soft
15.00 ml butter — soft
500.00 ml flour — wholewheat
100.00 ml sunflower seeds — toasted
5.00 ml Bicarbonate of soda
5.00 ml Baking powder
2.00 ml salt
125.00 ml water
150.00 ml bran

Method:

Preheat the oven to 180 ºC and lightly butter the hollows of a muffin tin or spray with non-stick spray.
Pour the boiling water over the mashed bananas and seedless raisins and set aside.
Mix the sugar and butter with a wooden spoon until well blended. Add the wholewheat flour and sunflower seeds. Sift the bicarbonate of soda through a fine sieve and add along with the baking powder and salt. Mix well.
Make a hollow in the centre of the dry ingredients and add the soaked banana and raisins and the remaining water. Add the bran and stir until just blended. Fill the muffin tin hollows three-quarters of the way with the mixture and bake for 25-30 minutes until baked through. Cool slightly, turn out and serve with butter.
Makes 12 muffins.
