Baked sweet potatoes with pepper butter

    large sweet potatoes
  • 20
    fresh lemon juice
  • 15
    freshly grated lemon rind
  • 185

    whole black peppercorns, crushed
  • pinch salt

Preheat the oven to 180 ºC. Prick each sweet potato a few times with a fork and arrange on a baking sheet. Bake in the bottom of the oven for about 1 hour until just tender. Meanwhile beat the lemon juice and rind, butter, black pepper and salt together until light. Place the cooked sweet potatoes on a serving platter, cut them into slices and drizzle with a little of the sauce. Serve as a side dish. Serves 4-6.
