Baked snoek

  • 1
    fresh snoek, butterflied
  • butter
  • fish spice and lemon juice to taste


Melt about 30 ml (2 T) butter in a stainless steel pan and place the snoek skin side down in the pan. Dot the thicker parts of the fish with butter, season with fish spice and lemon juice and cover with aluminium foil. Bake slowly over the coals until all the butter has melted into the fish, by which time the fish should be ready.
