Asparagus pesto

  • 3
    cloves of garlic, roughly chopped
  • 1
    medium onion, chopped
  • 1
    packet pine nuts
  • 2
    packet Woolworths asparagus
  • 1
    lemon, grated rind and juice
  • Olive oil
  • Salt and pepper
  • 1
    handful grated Parmesan

Lightly sauté the onion and garlic in some olive oil until the onions become translucent, and then put aside.
Roast pine nuts in a pan until they brown, being careful not to let them burn.
Steam the asparagus stems for 2 minutes, and then add the tips, steam for another minute.
Then blend onion, garlic, pine nuts, Parmesan, lemon rind, lemon juice with steamed asparagus, adding salt, pepper and more olive oil to taste.
Serve with fusilli.
