Arrabbiata pasta sauce

    extra virgin olive oil
  • 2
    cloves garlic, crushed
  • 60
    bacon, cut into thin strips
  • 800
    whole peeled tomatoes, coarsely chopped (reserve juice)
  • 1
    crushed dried chillies
  • salt

    medium fresh basil leaves, torn into pieces
  • 30
    grated Parmesan cheese
  • spaghetti or penne pasta


1. Heat all but 15 ml of the olive oil in a pan and sauté garlic until sizzling. Add bacon strips, cook until crisp. Add tinned tomatoes, crushed chillies and a little salt. Reduce the heat and simmer until the tomatoes have reduced and the oil separates to sides and top (± 40 minutes). Remove from heat and set aside. 2. Cook pasta. Return sauce to heat and add basil. When pasta is cooked, drain and toss with sauce in pan, turning off the heat. Stir in remaining olive oil and grated cheese. Season and serve.
