Ingredients (16)

105.00 g sugar
190.00 ml orange juice — fresh
65.00 ml water
5.00 ml mixed spice — ground
500.00 g apricots — tinned, drained
2.00 kg Granny Smith apples — peeled, cubed
25.00 ml rum — dark
TOPPING
140.00 g flour — cake
55.00 g sugar
5.00 ml Baking powder
2.00 ml Bicarbonate of soda
2.00 ml salt
65.00 ml butter — chilled, cubed
85.00 ml Buttermilk
5.00 ml orange — zest only
10.00 ml sugar

Method:

Preheat oven to 180 ºC. Combine sugar, orange juice, water and mixed spice in a saucepan. Bring to boil, stirring occasionally. Reduce heat and simmer for 10 minutes until mixture has thickened slightly. Cool slightly, then stir in apricots, apples and rum and spoon into a greased ovenproof dish.
TOPPING
Combine flour, sugar, baking powder, bicarbonate of soda and salt. Rub in butter until mixture resembles breadcrumbs. Combine buttermilk and rind, add to flour mixture and stir lightly until mixed. Spoon topping over fruit mixture, sprinkle with sugar and bake for 35 minutes or until golden brown. Serves 8.
