Almond tart with orange and chocolate

    castor sugar

    large eggs, separated

    ground almonds

    oranges, grated zest

    dark chocolate, broken into small pieces

    oranges, peeled and sliced

Line the bottom and sides of a 23 cm springform tin with greaseproof paper.
Reserve 15 ml of the castor sugar.
Add the egg yolks to the remaining castor sugar and beat until light.
Stir in the almonds, spices, orange zest and chocolate.
Beat the egg whites until foamy. Add reserved sugar and beat until thick and stiff.
Add a little of the egg whites to the egg mixture and mix in gently.
Add to the remaining egg whites and fold in carefully to retain the incorporated air.
Spoon the mixture carefully into the prepared tin.
Bake in a preheated 180 °C oven for about an hour until firm and golden.
Place all ingredients, except the orange slices, in a saucepan and bring to the boil.
Add orange slices and simmer for five minutes.
Cool and then refrigerate until ready to serve.
Remove tart from oven and cool completely before removing from the tin.
Spoon some of the syrup over the tart.
Serve sliced with a slice or two of the orange and extra sauce.
