All-in-one sponge

  • 225
    soft margarine
  • 225
    castor sugar
  • 225
    self-raising flour
  • 10
    baking powder
  • 4
  • 20
    warm water
  • jam and whipped cream to decorate
  • icing sugar to dust


20‑25 minutes
Place margarine, castor sugar, self-raising flour, baking powder and eggs together in a large bowl with warm water and beat for three minutes with a wooden spoon or one minute in an electric mixer until thoroughly combined.
Divide the mixture between two lightly greased and lined 19 cm baking tins.
Bake in a preheated oven at 180 ºC for 20-25 minutes until risen, firm to the touch and shrinking away from the sides of the tin.
Leave the sponge in the tins for five minutes and then turn out onto a wire rack to cool.
Sandwich the sponges together with jam and whipped cream.
Dust with sieved icing sugar to serve.
