Cheese and mushroom stuffed herb loaf

One of our favourite foods at a braai is the garlic bread! Here it’s elevated and given a new lease on life with the addition of mushrooms, baby spinach and mozzarella cheese. It might not be at the top of the healthy list, but it sure is at the top of tasty.

Ingredients (11)

1 ciabatta
1/2 cup mozzarella cheese — grated
1/2 cup cream cheese
2-3 mushrooms — sliced
1/2 cup spinach — finely chopped
1/4 tsp garlic — cloves, minced
4 tbsp yoghurt — Greek
2 tbsp mayonnaise
2 tsp fresh dill — chopped
2 tsp fresh parsley — chopped
salt and freshly ground black pepper — to taste

Method:

Preheat the oven to 180°C. Cut the bread in slices, but not all the way through. Combine the remaining ingredients until well mixed, then spread between the slices. Wrap the bread in foil, place on a baking sheet and bake for approximately 20 minutes or until the cheese has melted and the stuffing has softened. Serve immediately.
