Watermelon kebabs

Ingredients

  • 400
    g
    prawns, shelled and deveined
  • 1/4
    watermelon, cut into triangle
  • 2
    red onions, cut into wedges
  • 250
    g
    halloumi cheese, cut into cubes
  • 12
    kebab skewers, soaked in water
  • salt and freshly ground pepper
  • 60
    ml
    balsamic reduction
 

Method

8-10 MIN
 

1 Thread a prawn, watermelon triangle, onion wedge and halloumi cube onto a kebab skewer.

Thread another set of the ingredients onto the skewer, in any order, and season with salt and pepper.

2 Repeat with the rest of the ingredients and skewers.

Brush the kebabs with the balsamic reduction and fry in batches in a hot griddle pan for a minute a side.
