Watermelon kebabs

TIP: Replace the prawns with pork cubes. Season the meat with salt and pepper and cook
separately in the hot griddle pan before adding to the skewers.

Ingredients (7)

400 g prawns — shelled and deveined
1/4 watermelon — cut into triangle
2 red onions — cut inot wedges
250 g halloumi cheese — cut into cubes
12 wooden skewers — soaked in water
salt and freshly ground black pepper
60 ml balsamic reduction

Method:

1 Thread a prawn, watermelon triangle, onion wedge and halloumi cube onto a kebab skewer.

Thread another set of the ingredients onto the skewer, in any order, and season with salt and pepper.

2 Repeat with the rest of the ingredients and skewers.

Brush the kebabs with the balsamic reduction and fry in batches in a hot griddle pan for a minute a side.
