  • 1 whole yellowtail

    oil

    fresh ginger, finely julienned

    soy sauce
  • pinch
    white pepper
  • 3 spring onions, sliced
  • handful
    coriander, chopped
  • 1 red chilli, chopped

Preheat oven to 200 °C.

Remove any scales, especially on the belly, the edges, the head and tail, using a sharp knife.

Cut off any fins with kitchen scissors. Leave the tail and head intact for presentation purposes. Slit the underside and remove the insides. Put the fish on a baking tray.

Heat 30 ml (2 tbsp) oil and the ginger in a saucepan until the ginger sizzles. Add the water, salt, sugar, soy sauce and pepper, and heat until simmering.

Add the rest of the oil and spring onions and simmer for 3 minutes. Spoon the mixture evenly over the fish and bake for 12 minutes.

Put the fish on a platter and scatter coriander and red chilli on top.
