Savoury polenta pots

Ingredients

  • 4x250
    boiling water salt and freshly ground black pepper
  • 250
    ml
    polenta
  • 30
    ml
    butter
  • 250
    ml
    grated pecorino cheese
  • 45
    ml
    basil and sun-dried tomato pesto each
 

Method

10 minutes
 

Make stiff polenta and leave it to set in bowls. Serve it at your next braai as a stylish alternative to a big pap pot.

1. Grease 6 moulds with non-stick spray.

2. Pour the water into a saucepan and add a pinch of salt. Gradually sprinkle the polenta over the boiling water while beating continuously. Cover and simmer gently for 10 minutes, stirring occasionally.

3. Stir in the butter and pecorino cheese and season with salt and freshly ground black pepper.

4. Divide the mixture in half and stir the basil pesto through one half and the sundried tomato pesto through the other.

5. Spoon the polenta into separate moulds. 6 Serve as a side dish with braaied meat.
