Ingredients (9)

270.00 g oat bran
50.00 g brown sugar
60.00 ml raisins — finely chopped dried fruit
12.00 ml Baking powder
5.00 ml salt
315.00 ml milk — low-fat
2.00 eggs — whisked
25.00 ml oil
60.00 ml fruit spread — or jam

Method:

Preheat the oven to 200°C. Grease the base of a 12-hollow muffin tin.

Combine all the dry ingredients in a bowl.

Blend the milk, eggs and oil together stirring well.

Add to the dry ingredients and mix lightly.

Fill each hollow in the muffin tin with the mixture up to 3/4 full. Top each with a teaspoonful of fruit spread and top this with more muffin mixture.

Bake for 15 – 20 minutes or until done and golden brown on top.
